Not all seasonings are gluten free. Read labels to make sure the one that you are using is gluten free or make homemade gluten free taco seasoning.
Unless you are making a taco soup without beans, taco soup will call for canned beans or chili beans. The soup recipe I am sharing today does. Not all chili beans are gluten free, so read the label to make sure the beans you are using are gluten free.
The other ingredients in taco soup, like tomatoes, corn, broth, chicken, etc. are usually gluten free, but always read the labels to make sure that they are gluten free.
Can I freeze taco soup?
This recipe freezes great. In fact, it is one of my favorite gluten free freezer meals.
Taco soup is easy to make in a big batch so that you can freeze the extra.
Cook it as directed. Let it cool completely. Place it in freezer friendly containers and freeze. I like to freeze it in lunch size portions as well as larger dinner sized amounts.
Can I make this on the stove top instead of in the Crock Pot?
Yes, this recipe works great on the stove top. Brown the meat with the onions and peppers. Drain off the fat and add the remaining ingredients. Cook on low for 20-30 minutes, stirring occasionally.

Taco soup is great on its own. It is a meal all by itself. I love to eat it with gluten free tortilla chips, but cornbread cookies or gluten free bread without yeast are also delicious with it.
Gluten Free Taco Soup
Gluten Free Taco Soup is an easy gluten free meal. It can be made ahead, freezes well, and can be made on the stove top or in a slow cooker.
Ingredients
- 1 pound ground beef
- 1 onion, diced
- 1 green pepper, chopped
- 48 ounces V-8
- 1 can corn, drained
- 1 can kidney beans, rinsed and drained
- 1 can chili beans, read label to be sure they are gluten free
- 1 package of gluten free taco seasoning
Instructions
- In a skillet or pan brown ground beef with onions and peppers until meat is no longer pink and onions and peppers are tender.
- Drain off any fat and place meat mixture in a 5 or 6-quart crock pot.
- Add V-8 juice, corn, beans, and taco seasoning.
- Stir to combine well.
- Cook on low for 3-4 hours.
Notes
This soup can be made on the stove top instead of in the slow cooker. Cook meat, onions, and peppers. Drain off any fat. Add remaining ingredients. Cook on low for 20-30 minutes stirring occasionally.
