Gluten Free Banana Bread

Banana bread is a classic comfort food that almost everyone loves. It was one of the first recipes that I worked to get gluten free. 

After a lot of trial and error I final came up with a gluten free banana bread recipe that we love! 

It also happens to be dairy free so if you need a gluten free dairy free banana bread this recipe works great. 

If you want to make it extra special stir a few chocolate chips into the batter. 

When did banana bread originate? 

It is hard to know the exact history of banana bread. Banana bread is said to have been developed back in the early 1930’s.

During the Great Depression every ingredient mattered and nothing went to waste, so people looked for ways to use up overripe bananas.

It was also during this time that baking powder and baking soda were mass produced and became more available to everyone. This availability helped the popularity of quick breads. 

Can I use a gluten free blend to make gluten free banana bread? 

I get asked that question a lot and the answer is that it depends on the recipe. 

The reality is that I have found that in order to get the best desserts and quick breads you often need individual gluten free flours not blends. That is against popular opinion but I have found it true more times than not. 

Yes, a blend will get you good results. Using the individual flours will get you the best results. They will get you a dessert that will have people coming back for more. For this recipe it is worth it to make it just as it is written with the individual flours

Gluten Free Banana Bread Recipe

Gluten Free Banana Bread

Easy to make gluten free banana bread that is so good no one will know that it is gluten free.

Prep Time 5 minutes
Cook Time 55 minutes
Total Time 1 hour

Ingredients

  • ¾ cup brown or white rice flour
  • ¾ cup potato starch
  • ½ cup tapioca starch/flour
  • 1 teaspoon xanthan gum
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 2 eggs
  • 1 cup sugar
  • 3 ripe banana, mashed
  • 1 teaspoon vanilla
  • ½ cup oil

Instructions

  1. Preheat oven to 350 degrees.
  2. Grease a 9x5 loaf pan and set aside.
  3. In a bowl combine rice flour, potato starch, tapioca starch, baking powder, baking soda, and salt. Set aside.
  4. In another bowl cream together eggs, sugar, and oil. Add in bananas, and vanilla. Mix well.
  5. Stir in flour mixture just until combined.
  6. Pour batter into loaf pan and bake for 55-60 minutes.
  7. Let set in pan for 10 minutes and remove from pan to wire rack to cool.

Notes

For chocolate chip banana bread stir chocolate chips into the batter before baking.
